Diwali, which means sweets all around. This is of the sweets this year for the Diwali, so decided to post the recipe of ‘Double ka meeta’, the way I make. ‘Double ka meeta’, is one of the delicious desserts which is popular with kids and adults alike. It is made with everyday ingredients but is considered ‘rich’ and ‘popular’ desserts because of the taste. I heard the bread can be deep fried in hot ghee too, but according to me that is too much fat to be handled for anyone. I deep fry in Canola oil which gives nice balance and taste. I used to use regular white sugar, but not anymore. I am using brown sugar which enhances the taste immensely. As buns are called ‘double roti’ and sweet means ‘meeta’, I am safely assuming that is how this dish got the name ‘Double ka meeta’. This is how I make this dessert…
One cup of sugar and few cardamoms.
About 6 to 8 slices of bread depending upon the size of the bread slice.
I arranged them in a baking tray and toasted it for about 5 minutes in the toaster oven. This makes the bread little dry and it will absorb slightly less oil.
Heat the required amount of oil for deep frying and drop the bread slices few at a time.
Once you take it out from the oil if possible try to press like this so that excess oil will be drained.
Meanwhile add required amount of sugar and equal amount of water in a pan and let it come to boil. Once it comes to boil reduce the flame and let it simmer for 5 minutes. Add crushed/powdered cardamom powder.
Add fried bread pieces to the sugar syrup. Gently press them into the syrup. Finish adding remaining fried bread pieces.
Double Ka Meeta is ready! Top it up with nuts of your choice and serve. Usually nuts are used liberally in this sweet dish, as my kids are allergic to nuts I replaced them with sunflower seeds.

Sugar – 1 cup or as required (some make this dish very sweet)
